Las Marietas

Las MarietasIdeally situated under the canopies of three open palapas, Las Marietas features authentic regional Mexican cuisine and breathtaking views of the Pacific. Signature dishes include traditional free-range chicken mole stuffed with dried fruits and blanketed in red mole sauce with toasted sunflower, almond and sesame seeds. Las Marietas’ ceviche is marinated in lemon and scented with fine herbs.

Bahia by Richard Sandoval

Bahia RestaurantAptly named, Bahía, or “bay” in Spanish, enjoys the premier location on the Resort’s Las Cuevas beach, taking advantage of the ocean breezes and world-class sunsets. This contemporary beachfront grill offers  al fresco seating in a relaxed atmosphere with a sleek, contemporary design. Bahía features a main dining room, a separate al fresco seating area perfect for large parties, and a bar area. Bahía’s bar is the perfect place to enjoy one of our unique martinis while gazing at the Pacific’s remarkable sunset.

Chef Sandoval takes full advantage of the restaurant’s prime location to innovatively prepare the most freshly caught bounty available from local fishermen. Sandoval puts his own unique spin on traditional Latin American cuisine, from small plates or “tapas” to wood-fired meat with his signature sauces and marinades.

Cooking Classes

For something unique, try Bahia’s cooking classes! Every Thursday, one of Bahia’s chefs gathers guests on the beach to participate in their famous “catch of the day” program, where guests can work with the chef to choose from a variety of fresh seafood right off a local fishing boat. The first half of the class is spent learning cooking techniques while the last half is devoted to enjoying participants’ culinary creations.
